The Wednesday Roundup Link Party at bottom of recipe
Just when you thought it was safe to relax and bask in the calm of after Christmas chaos, BAM, it's Valentine's Day. I really like to press mini peanut butter cups into peanut butter cookies but to give a nod to Valentine's Day, I decided to use heart shaped Dove chocolates and so became the Peanut Butter Cookies w/ Chocolate Love. Clearly the creative juices weren't flowing, because that was the best name I could come up with. But as corny as it is, the name fits.
The best thing, for me, about this cookie is that it bakes up thick and chewy, where I normally find peanut butter cookies fall flat.
PRINT RECIPE
Ingredients:
- 1 stick butter, softened
- 1/2 C brown sugar (dark)
- 1/4 C sugar
- 1 egg
- 3/4 C peanut butter (creamy)
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1 1/4 C flour
- 24 heart shaped chocolates (I used Dove 1/2 dark chocolate and 1/2 milk chocolate)
- In a large bowl, using a hand mixer, cream together butter and sugars. Mix in peanut butter, then egg and then the vanilla.
- Slowly mix in the dry ingredients.
- Chill dough for 30 minutes.
- Preheat oven to 350.
- Sprinkle 1-2 T of sugar on a plate. Roll dough into balls (I use a small ice cream scoop to measure evenly) and roll the top off each in the sugar (optional step). Place on ungreased cookie sheet and bake 10 minutes. (Cookies may not look done at this point, but they will firm as they cool.)
- Press a chocolate heart into each cookie, quickly transfer to a cooling rack and place entire rack into freezer for 10 minutes or refrigerator for 30 minutes to set chocolate.
- Remove from refrigerator/freezer and store in an airtight container.
