Allergy Friendly Chocolate Chip Cookies

You may have noticed lately I have been making more and more baked goods that are allergy friendly. Now that Nora is getting a bit older she really is aware of what her siblings are eating and I don't want her to feel too cheated.

 I try to avoid the term "allergy free" because anyone can be allergic to anything really, so I don't find the statement to be in truth.  I prefer allergy friendly because they are free of the top 8 allergens.  I really should try some gluten free cooking but dealing with 7 food allergies is tough enough without throwing gluten free in the mix.  So for now I am still avoiding the gluten free trend.

I made these cookies using, none other, than my favorite allergy friendly chocolate chips by Enjoy Life .  They are free of the top 8 allergens and somehow are still super chocolately and delicious.

By the way, I should mention that I made these for Thanksgiving.  I didn't want my little Nora to see everyone indulging on decadent desserts and feel left out so I made these specifically for her.  I did not make a "normal" cookie and everyone ate these and no one was the wiser.  I swear if I didn't tell you then you wouldn't know they were allergy friendly.


ALLERGY FRIENDLY CHOCOLATE CHIP COOKIES


INGREDIENTS:
  • 1 C dairy free/soy free margarine (Earth's Balance or similar)
  • 1/2 C brown sugar
  • 1/2 C white sugar
  • 1/4 rice milk (or soy milk if no soy allergy)
  • 2 tsp vanilla extract
  • 2 1/4 C all purpose flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 10 oz allergy friendly chocolate chips (Enjoy Life or similar)
DIRECTIONS:
  1. Preheat oven to 350.
  2. Mix together the margarine and both sugars with a hand mixer about 2 min.  Add rice milk and continue to mix another minute.  Finally add the vanilla and mix 1 more minute.
  3. In a separate bowl combine the dry ingredients.
  4. Add the dry ingredients to the wet ingredients and mix until well blended.
  5. Fold in the chocolate chips.
  6. Spoon small balls (I used a small ice cream scoop) of cookie dough onto cookie sheet and bake 8-10 minutes.  Let stand on cookie sheet 2 minute prior to moving to cooling rack.





Below are two of my favorite allergy friendly items to get for my daughter.  She LOVES the Coco-Loco Bars.  Now if I can just come up with a recipe of my own for them...
