This past weekend we had our oldest daughter's confirmation party. I originally planned on getting it catered because I wasn't sure if I was going to be able to cook yet with the hand still in a soft cast. Then we decided to keep the party small with only our immediate families and we would order pizza and keep it super casual. Turns out, I have a real issue giving up control of food for a party. None of the above happened. We ended up having about 20-25 people and I cooked it all-air cast and all. I'll be sharing a few of the recipes I made later this week but today I am sharing what in my opinion was the star of the show. A salad of all things. I even saved the leftovers and had it for lunch today. I have never eaten leftover salad before ... It was THAT good. Did I mention it was ridiculously easy too?
Caramelized
Onion & Apple Salad CLICK HERE to Print
INGREDIENTS:
1 T butter
1 T olive oil
4 sweet Vidalia onions, thinly sliced
1.5 tsp brown sugar
3 apples, peeled, cored and chopped
½ C crumbled goat cheese
1 large bag salad greens (I prefer spring mix)
½ C craisins
DIRECTIONS:
In a large sauté pan, heat oil and butter over medium
heat. Add onions and cook on medium/low
until onions are soft and starting to brown about 10-15 minutes. If they seem to be getting dry add a teaspoon
of water. Add apples and brown
sugar. Continue to cook over medium/low
heat until everything is softened and nicely caramelized about 10 more minutes.
Allow to cool about 5 minutes.
Spread salad greens on a large platter. Top with onion/apple mixture. Add craisins
and goat cheese crumbles.
Serve with desired dressing.
I prefer a white balsamic/honey
