Slow Cooker Chicken Teriyaki + Tuesday Tastings Link Up #10

I have had teriyaki style chicken on my mind ever since a friend and neighbor of mine called me the other day to ask a question about soy sauce for a slow cooker recipe she found on....you guessed it - PINTEREST!  Then a few days later she told me it wasn't good. Bummer. Quite the dilemma for me,  because I still wanted a good teriyaki chicken.  I'm not exactly sure how she made hers and haven't looked at the recipe so hopefully this isn't an exact replica.  I thought it was quite good.  We will see. Maybe she will give mine a try and she can be the judge.


Ingredients:
1.5 lb chicken, cut into big cubes (In my experience if you cut too small for a slow cooker it falls apart)
1/2 C chicken broth
1/2 C teriyaki sauce
1/3 C brown sugar
4 garlic cloves, minced (I put mine through a press)
1/8 tsp crushed red pepper flakes
8 oz can of pineapple chunks, liquid reserved
3 T cornstarch

Directions:

  • Spray slow cooker with cooking spray or use a liner (my favorite method).
  • Place chicken in bottom of slow cooker.
  • In a bowl whisk together broth, teriyaki sauce, brown sugar, garlic, pepper flakes and juice from pineapple.  Pour on top of chicken.
  • Cook on low 4 hours.
  • Using a slotted spoon remove chicken and set aside.
  • Mix cornstarch with just enough water to dissolve.
  • Pour sauce from slow cooker into saucepan (made much easier if using a slow cooker liner). Heat over medium high heat. Add cornstarch mixture and stir while heating about 2 minutes until it thickens to desired consistency. 
  • Add pineapple to sauce and pour over chicken.
Serve over prepared rice.

Optional: 
Top with crushed peanuts or sesame seeds.
Garnish with green onion.

I have never put a theme on a link party, especially since I'm new to this and trying to build it. But, next week, I am having surgery on my hand and I'm looking for some  quick easy meals or freezer meals that I can prepare this week, that my husband can just throw in the oven next week.  That being said, if you don't have a quickie meal or a freezer meal still share something.  It's not a requirement, just a plea for some ideas :-)
