Beef & Spinach Lo Mein (Fake Out Take Out)

Clearly I am still on my Asian kick.  My family, I fear, is over it.  I just can't help myself.  Now that I have a better understanding of the ingredients and how to prepare them, I just want more.  I feel so accomplished that I am conquering my fear of Asian cuisine.

So yes, enough patting myself on the back.  I actually saw this recipe in Taste Of Home's Simple & Delicious magazine (Oct/Nov 13).  I made a few small changes, for instance they used regular spaghetti.  I opted for lo mein noodles, I mean the recipe is called Lo Mein so I thought it should at least have the right noodle.  If you are afraid of these then by all means use spaghetti, I won't judge you.  (well, I will but I won't do it out loud).

Ingredients:

¼ C hoison sauce

2 T soy sauce

1 T water

2 tsp sesame oil

2 garlic cloves, minced

¼ tsp red pepper flake

1 lb beef top round steak, sliced thin

8 oz package of lo mein noodles, prepared according package

2 tsp canola oil

1 C sliced water chestnuts, drained

2 green onions, sliced

10 oz fresh spinach, roughly chopped

DIRECTIONS:

Combine the first 6 ingredients.  In a large bowl add the steak slices and marinate with ¼ C of the mixture, set aside the rest of the sauce.  Marinate at room temperature for 10 min.

In a large skillet add 2 tsp. of oil and heat over medium/high. Stir fry the beef until no longer pink (2-3 min).  Remove beef with a slotted spoon.  Return pan to heat, add water chestnuts and green onions, stir fry 1 minute.  Add chopped spinach and remaining sauce.  Cook until spinach is wilted.

Return beef to pan.  Add cooked lo mein.  Stir fry together, stirring well to combine 1-2 additional minutes.

Serve in bowls.

  1. I don't cook a lot of Asian food, I don't know why since it is really tasty. This looks yummy. I know that I would love it.

  2. Dawn, I was the same way until recently. Now that I've started I've realized how easy it is and I'm cooking it more and more. Enjoy!
