Fake Out Take Out - Lo Mein
I don't get take out very often, but when I do, it's almost ALWAYS chinese. It's certainly my weak spot. The down side is, I don't actually know what is going into this delicious food. Sometimes I don't want to know :-).
Okay so who knew it was this easy to recreate something that tastes like it came from a take out carton and certainly is healthier.
I used vegetables that I had in my house already but you could mix it up with using snow peas, cabbage, beans, peppers and/or broccoli.
I served this with my orange chicken. (I'll be posting that soon).
Ingredients:
1/4 C soy sauce
1 T light brown sugar)
3 clove garlic, chopped or minced
1 tsp freshly grated ginger
1/8 tsp black pepper
2 T canola oil
1/2 tsp peanut oil (optional but advised)
2 packages yaki soba noodles (the refrigerated ones) discard flavor packets that are included)
3 stalks celery, sliced
1 onion, sliced
1 can baby corn, drained and chopped if desired
1 can bean sprouts, drained
Directions:
In a bowl, whisk together soy sauce, brown sugar, garlic, ginger. Set aside.
Rinse and separate noodles- drain and set aside.
Heat oils in a large skillet over medium/high. Add onion and celery and cook about 2 minutes. Add corn and bean sprouts (or whatever additional veg you are using) Cook another 3-4 minutes.
Add noodles and sauce mixture and continue to cook about 4-5 minutes until heated through. Be sure to toss well as it's cooking to make sure everything gets well coated.
Your Lo Mein looks delicious! It's one of my favorite things to order when getting take-out, but I've never tried making it at home yet! I'll have to give it a try, this looks fantastic!
