Pillsbury Superspeedway Taco Pie

If your kids are like mine, then tacos are probably a staple in your house.  The problem for me, is that I don't love plain old tacos the way the kids do.  When I stumbled upon this recipe on Pillsbury's website, I knew I had to try it.  It was just the cure for the taco rut.

Ingredients:

1 lb  ground beef
1 (1 oz) taco seasoning mix
1/2 C water
1 8oz can crescent rolls
2 C crushed corn chips
1 C sour cream
1 C shredded cheese, I used Mexican blend but cheddar would be fine
1/2 C shredded lettuce



 


Directions:

Preheat oven to 375.

Cook ground beef in skillet until cooked through.  Drain.  Return to pan, add taco seasoning and water.  Simmer 5 minutes.

Meanwhile, separate crescents into 8 triangles. Place triangles in an ungreased 9 or 10 inch pie pan, pressing to form crust.  Sprinkle 1 C corn chips over crust.

Spoon beef mixture over corn chips in crust.  Spread sour cream over beef.  Sprinkle cheese over top.  Top with remaining corn chips.

Bake at 375 for 25 minutes. 

Top with shredded lettuce before cutting into wedges to serve.
