Salisbury Steak With Onion Gravy

Once again I was browsing on Pinterest and came across this recipe and I thought, "do people really eat salisbury steak"?  But then I read the recipe and it actually sounded delicious so I figured "what the hell".  I was pleasantly surprised at how tasty this dish was.  It paired perfectly with mashed potatoes and peas. 

The recipe I got on Pinterest looks like it orignated on "One Perfect Bite" blog.  I'm not sure if it was an original recipe or not but thank you to the author of One Perfect Bite.  (I do like to give the proper credit so go ahead and check out that site too).

start by sweating out the onions
add a bit of broth and let them cook down
combine rice and seasonings
combine with beef and form patties
add flour to the onions to create the base of the gravy
Add cider and broth and let the gravy simmer
cook patties
Add patties to gravy to finish cooking


 



Gravy Ingredients:
 
2 large red onions, thinly sliced
2 T butter
2 T flour
3 C beef broth
1/2 C red wine
1 T tomato paste
1 tsp cider vinegar
salt and pepper to taste
 
Meat Patties
1 lb ground beef
1/2 C cooked white rice
11 egg yolk
1 tsp salt
1/4 tsp pepper
1 clove minced garlic
1 tsp worcestershire sauce
3 T chopped parsley (fresh)
1/2 tsp dried thyme
1 T olive oil
 
Recipe:
 
Start with the gravy:
Heat butter in large saute pan.  Add onions and cook over medium heat until onions start to brown.  When onions are slightly soft, add 1/4 C broth.  Reduce heat and cover.  Continue cooking, adding more broth as needed to prevent sticking, about 20-25 minutes.  Stir in flour and let it cook out about 2 minutes.  Add wine and let reduce to half (I crank the gas closer to high at this point to let it reduce better but the recipe did not call for that).  Stir in remaining broth, tomato paste and cider vinegar.  Simmer about 10 minutes.  Add salt and pepper to taste.  Reduce to low to keep warm while making the patties.
 
For the patties:
Mix rice, egg yolk, salt, pepper, garlic, worcestershire sauce, parsley and thyme together.  Add ground beef until combined.  Form into oval shaped patties.  Heal oil in a large skillet over medium high heat.  Sear the patties about 3 minutes per side to get a nice brown crust.  Pour gravy over patties and simmer about 10 minutes until patties are fully cooked.
