Pepperoni Pizza Quesadilla

I'm not.  I had originally decided to stay true to my New England Patriots and just pretend the Superbowl wasn't happening.  But last minute I decided I had to share the recipe for Pepperoni Pizza Quesadilla!  Just because our team lost, you shouldn't be deprived of a yummy game day snack.  How very grown up of me, huh?

I actually first gave these a try on New Year's Eve, when we had a game night with my brother and his family.  I forgot to photograph them then though, because they were ready the minute they were walking in the door, and I got sidetracked.  I know, I am hanging my head in shame.  How dare I?  Anyway, that night, I cut them into small bite size squares and more recently, into large triangles.  You do whatever your little heart desires.  Any way you slice it, it's going to be good.  See what I did there, with that play on words?  Clearly, I'm cracking myself up today, or maybe just cracking up.
I better get on to the recipe.

PEPPERONI PIZZA QUESADILLA

INGREDIENTS

  • 2 large flour tortillas
  • 1 T butter, softened
  • 1/4 C pizza sauce (additional for dipping if desired)
  • 10-12 slices pepperoni (or turkey pepperoni)
  • 1/2 C shredded cheese, pizza blend (or just mozzarella)
  • 1 tsp Italian seasoning

DIRECTIONS:

  1. Preheat oven to 400.
  2. Spread butter on one side of each tortilla.
  3. Place one tortilla, butter side down, on a baking sheet (I line all my sheets w/ non stick foil)
  4. Spread sauce on tortilla, place pepperoni on top of sauce and top with cheese.  Sprinkle with Italian seasoning and place second tortilla, butter side up on top.
  5. Bake in oven for about 7-10 minutes, or until nice and brown and crispy.
  6. Serve w/ additional pizza sauce w/ or w/out parmesan cheese.

You can omit the butter if desired but it won't crisp up as much and I really prefer a super crispy "crust".
