My Best Banana Bread Recipe & The Wednesday Roundup - Week 2

If you are anything like me, at the end of the week, you find yourself with a few bananas that haven't been gobbled up by the kids and are looking a bit lackluster.  Once they get a few dark spots on the peel the kids won't touch them.  I, however, am a smart enough woman to know that the riper the banana, the sweeter it is, making those sad looking bananas the perfect candidates for banana bread.
 
The timing for me making this is no accident.  I never cook breakfast on Thanksgiving morning.  Who the heck has time for that? Not me!  This is the perfect breakfast bread to make the day before Thanksgiving or even 2 days before.  Come Thanksgiving morning you can set it out and tell everyone to help themselves and then get out of your kitchen!  Well, that's MY plan anyway. 
 
                                        My Best Banana Bread Recipe:
Ingredients:
  • 1 2/3 C flour
  • 1 t baking soda
  • 1/4 t ground cinnamon
  • 1/2 t salt
  • 1 C + 2 T sugar
  • 2 eggs
  • 1/2 C canola oil
  • 3-4 very ripe bananas, mashed
  • 2 T sour cream
  • 1 t vanilla extract
Directions:
  1. Preheat oven to 350.
  2. Combine flour, baking soda, cinnamon and salt.  Set aside.
  3. In another bowl beat sugar and eggs with whisk 2 minutes.  Add oil and whisk another 2 minutes.  Add mashed bananas, sour cream and vanilla and stir together.
  4. Fold the dry ingredients into the wet.
  5. Pour into loaf pan and bake 45-60 minutes.  Test doneness with a toothpick. 
  6. Cool on wire rack.
  7. Spread cream cheese frosting over the top if desired. (see recipe below)
                                                Cream Cheese Frosting
Ingredients:
  • 4 oz cream cheese, softened
  • 1/4 C butter, softened
  • 1 C powdered sugar
  • 1 T milk
  • dash of salt
Directions:
Beat butter and cream cheese until creamy.  Add the sugar and continue to beat.  Add milk and salt and beat another 1-2 minutes.  If frosting is too loose, add a bit more sugar.
