Allergy Friendly Chocolate Sunbutter Cups

As you know, my daughter (who turns 2 today!!!) has 7 food allergies.  Not sensitivities, but actual, real, dangerous allergies.  So it's not often I can give her an indulgence.  I mean, I make do and adjust recipes to make them safe for her, but an actual, delicious, I'd eat it even if I didn't have to kind of treat is rare.

Since Nora's birthday party was yesterday, I spent most of last week looking to make her party "allergy friendly".  I tried a few different treats but these were by far the best. 

The only place where I went wrong here was I didn't use mini cupcake liners.  I made them directly in the mini muffin pan (because I didn't have any liners and I had to make them the minute I found them) and as a result when I was removing them, there was a bit of sticking, so as you can see a tiny bit of the sunbutter filling oozed out. So I'm writing the recipe to use liners.  But if you ask me, it's a nice little tease of the yumminess that is inside.  So for a pretty treat, I fail.  But for a lush treat, I win the prize!


 I used the recipe from Enjoy Life as a guide but I had a few different ingredients on hand so I did change it up a bit.
 
Ingredients:
 
SunButter Filling:
  • 3 T smooth sunflower seed butter
  • 1 t vanilla extract
  • 2 t liquid sugar in the raw
  • 1 T confectioners sugar
Chocolate:

Instructions:
  1. Stir the filling ingredients together until smooth. Set aside.
  2. Melt chocolate chips and sunflower seed butter together over double boiler, being sure to stir well to combine.
  3. Spoon a small dollop of chocolate mixture into a mini cupcake liner or candy liner (repeat until you have 12 liners done).
  4. Put a small amount of filling on top of chocolate and then cover the filling with more of the chocolate mixture.
  5. Place in the refrigerator until set (about an hour)
  6. Store in the refrigerator or freezer in an airtight container. 
Keep stored in refrigerator until ready to eat.  They will melt very quickly in your hands.

Do you or your kids have food allergies?  Have you or your kids outgrown a food allergy?  The doctors keep telling me it's likely she will outgrow at least some, but I'd love to hear from someone who has actually outgrown an allergy to give me a bit of hope.

    1. It's me! And these treats look delicious! I have a son that is 8. He was allergic to wheat, eggs, milk, nuts and peanuts. He has outgrown the wheat allergy---or at least tolerates it now. And he can have tree nuts. We have just learned to cook around the others :). And he hasn't had an anephelaxic episode for almost 5 years! Megan thanks for posting this!

    3. Larry, yay, congrats on outgrowing at least one. That's reassuring to hear. We luckily, haven't had an anaphylactic reaction, I'm dreading the day, if ever. I'm going to be changing up my blog template soon, and I'm hoping to devote an entire page to allergy friendly foods/recipes/tips. I hope you will stay tuned for that. :-)

  2. What a good mama you are- these look fantastic and I can't wait to read about her cake! I can only imagine how tough it is to make things special for her- she will know how hard you worked when she gets older.
