Turkey Sloppy Joes with Homemade Onion Rings

Kids love sloppy joes.  Well, most kids, one of my picky ones doesn't, but I'll chalk that up to him being a weird kid. Josh is currently on a nugget only diet. (This too shall pass) But everyone else here likes them.  I actually like sloppy joes too, but what I don't like, is feeding my family out of a can and with super fatty ground beef. 

It's pretty easy to lighten up a sandwich like this using lean ground turkey or chicken.  I even hid some veggies in the mix.  I diced up some carrots.  You could also finely chop celery, peppers and things like that if you have to hide veggies from your kids (and husbands).  The sauce mix is sort of "semi" homemade.  I did use one of those dry packets. Whatever, sometimes you've got to cut corners, right?

The best part of this meal is the onion rings I made to go with the sloppy joe.  They were super thin, crunchy and so delicious me and our oldest kid decided that they had to go IN the sloppy joe. Genius!

 
 

TURKEY SLOPPY JOE  (PRINT)

Ingredients:
§  1 lb lean ground turkey
§  1 packet sloppy joe seasoning mix
§  ½ onion, diced
§  1 carrot, diced (or shredded if you really want to hide it)
§  ¼ C Worcestershire sauce
§  8 oz tomato sauce
§  6 Sandwich/hamburger buns
Directions:
1.   Heat large skillet over medium heat. Add ground turkey, onions and carrots.  Cook until turkey is cooked through and veggies are tender.
2.   Add sloppy joe packet, Worcestershire sauce and tomato sauce.  Stir to mix well.
3.   Simmer until heated through, about 4 minutes.
4.   Serve on buns

 


      Onion Rings (PRINT)
Ingredients:
·         1 large onion
·         ½ C milk
·         2 C flour
·         1 T salt
·         ½ tsp paprika
·         2 C canola oil (or more depending on the size of your pan)
Directions:
1.   Slice onions very thin (using a mandolin is best) (I set mandolin between 1/4-1/8)
2.   Soak onions in milk for about 30 minutes
3.   Add flour, salt & paprika to a bowl, mixing well.
4.   Heat oil in a high sided skillet.  I didn’t take temp, but if you have to I’d say 375 is a good target temp)
5.   Dredge the onions, a handful at a time in the flour and then toss them in the oil.
6.   Let them fry about 1 minute, that’s all.  Remove with tongs or slotted spoon to a paper towel lined plate.  Season with additional salt if desired.

  1. These look delicious! I worked at Sonic for a while, and we used to make onion rings-- I had forgotten how much I liked them. I'll have to give these a try!
