Step Up Your Taco Night with Turkey Baked Tacos

If you have a kid/kids, then chances are you have some regular meal nights. I know each month I cycle through "Pizza night", "Sandwich night", the ever so dreaded "Salad night" and of course TACO NIGHT!

Years ago I started making small changes to our taco night.  I switched us from ground beef to lean ground turkey or chicken.  Honestly, it's healthier and I don't think my family has any idea that I do this (sshhh don't tell).  I also like to skip a side dish and really cram everything into the actual taco.  Sometimes it's black beans. Sometimes rice, corn or any combo of them together.

When I saw a recipe titled OVEN BAKED BEEF TACO over at Six Sisters Stuff, I knew I had to try it.  Or should I say a similar version of it.  It didn't disappoint.   This has quickly become my go to taco night recipe.  Give it a try and you will see why.

Lately I've been switching up the flavors by changing the type of salsa I use.  Tonight I used Mango/Peach salsa and the sweetness of the fruit gave such a nice balance to the taco.  By all means use a regular mild/medium/hot version but I think the fruity is the way to go.  Also, the husband informed me that he really likes the peach salsa so being the good wife that I am, I will serve it up the way he likes.Oven Baked Turkey Tacos by foodyschmoody.blogspot.com

Ingredients:

1 lb lean ground turkey
15 oz can black beans, drained rinsed
1 C canned corn, drained
1 T olive oil
1 medium onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 C salsa (whatever variety you prefer, I use peach/mango or peach pineapple)
12 Taco shells, Stand and Stuff variety or similar
1 ½ C shredded cheese, Mexican blend or cheddar
Instructions:
Preheat oven to 400.
In a large skillet, heat oil over medium heat.  Add onions and garlic and sauté until soft (about 5 minutes).  Add turkey and taco seasoning.  Cook until meat is browned.
Add beans, corn & salsa.  Cook about 5 minutes, mixing well to combine.
Line up taco shells in a large baking/casserole dish.  Fill each shell with turkey mixture. Pack down if necessary.  When all shells are full top each taco with cheese.
Bake 10 minutes until cheese is melted.
Serve with desired toppings.

  2. We have a weekly pizza night but I've never thought to do a taco night. I don't know why because I LOVE tacos. These look so yummy...and much simpler than the non-baking way of making them :)
