Ground Buffalo Chicken Sliders

Here's the thing. Buffalo Chicken is awesome. Its as simple as that.  I can't very well serve buffalo chicken wings every week though (but part of me would like to).  So here's my take on buffalo chicken this week.  I even put in the carrot and celery so it's got to be healthy, right?  From start to finish it took all of about 15 minutes.  The frozen sweet potato fries took longer to cook in the oven than these (go figure).

Ingredients:

1 T olive oil

1 lb ground chicken (or turkey)

1 carrot, shred with a peeler and chopped

1 celery stalk, chopped finely

3 T Frank’s Red Hot (adjust amount for your taste this was fairly mild)

¼ C prepared ranch or blue cheese dressing

½ C shredded sharp white cheddar cheese

8-12 slider buns or 4-6 regular sandwich buns

Directions:

Heat olive oil in a skillet over medium heat.  Add ground chicken and brown.  Add hot sauce, chopped carrot and celery and cook an additional 5 minutes. (note: if using turkey you may have to drain fat from pan but generally not with chicken)

Add dressing and stir to combine well.  Add cheese. Continue to cook over medium heat until cheese melts in.

Serve on slider buns or sandwich buns.  Add additional dressing and/or hot sauce if preferred.  Pairs well with sweet potato fries.
