Tuesday Tastings #7 & Rosemary & Lemon Buttery Grilled Chicken

I have to say, I am not a fan of grilled chicken.  In my experience it always ends up a bit dry and bland.  But it's healthy so we do it.  Well, forget everything you have ever learned about grilled chicken being healthy because this one has tons of BUTTER!  You can of course lighten it up by substituting the butter with olive oil.  I used chicken tenders because that is what I had on hand but you could use boneless chicken breasts as well.  I served mine with brown rice and green beans, I figured with all that butter, I had to add the health back in.



Ingredients:

1 stick butter
3 cloves garlic
1/4 C fresh rosemary
1/2 tsp seasoned salt
1 lemon, zest & juice
12 boneless chicken tenders (or 4-6 breasts)

Instructions:

Mix together butter, rosemary, garlic, lemon juice, lemon zest and salt in a food processor.  It should make a thick paste. Reserve about 1/4 of the mixture. Slather the remaining mixture all over your chicken and refrigerate for about 3 hours.

Heat a grill pan (or real grill) over medium heat. Cook about 4-5 minutes per side until no longer pink in the middle.

Microwave reserved butter mixture for about 20 seconds or until melted.  Drizzle melted herbed butter over cooked chicken and serve.
