A collection of recipes and food tips I've picked up over the years. Most of my recipes will be "shortcut" recipes but I still have a few "from scratch" or gourmet ones up my sleeve. Corn, Black Bean & Tomatillo Salsa
Summertime means cook outs and parties and FOOD! This salsa, or salad, depending on how you want to spin it, takes about 5 minutes to whip together and it travels well for bringing to cook outs, potlucks etc. Serve it with Scoop chips for a dip or spoon over grilled chicken, or just dip your spoon in and eat it as a salad!
Ingredients:
1 can super sweet corn, drained well
1 can black beans, rinsed and drained well
2 tomatillos, diced
1/2 red onion, diced
1 lime, juiced
3 T cilantro, chopped
1 tsp salt
Directions:
Combine all ingredients in bowl and gently stir to combine. Add more salt if desired.
I have always wanted to make a corn and black bean salsa, this one looks really good. I like how simple it is to make.
