Spring Salad

 
 
As soon as I start to get nice warm weather I want to toss all my heavy casseroles out the window and eat salad.  Of course now that the summer is here I want to grill burgers BUT that's besides the point.  And anyway you can serve this salad on the side of a nice juicy burger.  Okay, okay so this salad is named spring and it is now summer but I am just now getting around to posting about it.  If you want to make this the main dish just throw some precooked store bought chicken, or heck, if you are feeling it, grill some chicken or steak tips for the top.  Any way you serve it, it's good so go make it!
 
 
Ingredients:
 
  • 2 Cups bagged salad, spring mix or 2 C of your favorite mixed salad greens
  • 1 Avocado, diced
  • 1/4 C craisins
  • 2 T sunflower seeds (out of the shell of course) I use salted to bring a little salt to the dish to balance out the sweet craisins
  • 1 cucumber, diced
Optional: Blush wine vinaigrette
 
Directions: 
 
Place salad greens on platter.
Evenly distribute cucumber, avocado, craisins and sunflower seeds on top.
Serve with favorite dressing but it pairs so well with a wine vinaigrette.
