A collection of recipes and food tips I've picked up over the years. Most of my recipes will be "shortcut" recipes but I still have a few "from scratch" or gourmet ones up my sleeve. Either way, whether it be shortcuts or fancy schmancy dinners, I'm JUST cooking. Please feel free to leave me a comment and/or a suggestion.

Stuffed Chicken Thighs
Well if this isn't one of the easiest things I've ever made, I'm not sure what is. I have tried doing this with chicken breasts in the past but my chicken always ends up dry. This week chicken thighs (boneless and skinless) were on sale so I bought them for my "lazy" food night. They came out moist and delicious.
If you wanted to make this a true complete meal you could add some frozen defrosted vegetables like peas or beans or a mixed vegetable medley.
Ingredients:
1.5 lb boneless skinless chicken thighs (about 6 thighs)
1 jar chicken gravy
1/3 C milk
1 tsp seasoned salt
1/2 tsp black pepper
1 package chicken flavored stuffing (prepare as per box)
Preheat oven to 375.
Lie each thigh upside down and place a scoop of stuffing in the middle, roll up as best as you can and place seam side down in a 9x13 baking dish. (If you have stuffing left at this point, throw it right in the casserole dish in between each piece of chicken.
Season with seasoned salt and pepper.
In a small bowl combine milk and gravy. Pour over chicken. Cover with foil.
Bake 25 minutes. Remove cover and continue to cook an addition 10-15 minutes.
