Chicken and Stuffing Casserole


I am always buying those packages of precooked chicken when it goes on sale.  A lot of times at our local grocer they go on sale for buy one get one and that is the time to stock up.  The possibilities are endless, this time around it was cold and windy and I was feeling like some good old comfort food and to me that means yummy creamy casserole.

Ingredients:

3 T butter
1 small onion diced
2 celery stalks, diced
1/2 C flour
1 tsp salt
1/4 tsp thyme (dried) (or poultry seasoning)
1/8 tsp black pepper
2 C vegetable stock (chicken stock or broth would be fine but I prefer veg)
1 (12 oz) can evaporated milk
1 pkg precooked (perdue shortcuts) chicken, chopped into bite size pieces
1 box stuffing - prepare per box instructions (i used Stove Top Chicken Flavor)

Instructions:

Preheat oven to 350.

Melt butter in a saucepan.  Add onion and celery and saute until soft.  Add flour, salt and seasonings, whisk until flour is combined.  Add evaporated milk and stock.  Continue to cook over medium heat, stirring often until mixture starts to thicken.  Add chicken.

Pour mixture into 13x9 casserole, top with prepared stuffing. Cover with foil and bake 20 minutes.  Remove foil and return to oven and cook an addition 10-15 minutes until stuffing is nice and crispy and chicken mixture is bubbly.
