Slow Cooker Ginger Beef & Broccoli (Freezer Meal)

As I have said before, I really love the idea of freezer cooking but I just never seem to actually do it.  The only time it seems worth while to me is when something is on sale for super cheap at the grocery store.  I do not feel the need to cook a freezer meal each day of the week but it is helpful to know there are a few meals in the freezer for some lazy days.

Below is the recipe for 2 dinners.  You will want to split the ingredients to two large freezer zip lock bags.

Ingredients:

6 lb sirloin beef or other beef for slow cooking
2 Cups water
6 scallions, chopped
1/2 C soy sauce
4 tsp beef boulion granules
4 tsp minced ginger
4 tsp minced garlic
fresh broccoli florets (as many as you like) - for cooking day

Add all ingredients to bag
lie flat to freeze, once frozen you can stand it up if you don't have the room to leave flat
 


TO ASSEMBLE:
  • Trim beef into thick strips (do not cut into bite size chunks, it won't hold up in the slow cooker), about 2x5 inches.  Divide meat evenly into the bags.
  • Add the following to each bag, 1 C water, 3 scallions, 1/4 C soy sauce, 2 tsp boulion, 2 tsp ginger, and 2 tsp garlic.
  • Seal and freeze each bag.
TO COOK:
Take bag out of freezer and put in fridge the night before you want to cook it.
In the morning dump the bag into crock pot and cook on low 5 hours.  Add broccoli about a half hour before serving.
Serve over white rice.

ALTERNATE:
Put contents of bag in crockpot directly from freezer.  Cook on low 7 hours or until fork tender.  Serve over white rice.
