The other day I posted on Facebook that I had apple crisp in the oven. Later that night, I had a comment from a reader that they too were eating a yummy apple treat,; Apple Squares. I, of course, immediately requested the recipe. She ever so kindly and quickly messaged me the recipe.
Me being me, I made a few small changes and made the squares tonight, with the help of my husband who did ALL the peeling & chopping! See honey, I don't just trash talk you in my blog, I can praise you too!

Ingredients:
§ 3 C apples, peeled & diced
§ 2 eggs
§ ¾ C brown sugar
§ ½ C white sugar
§ ¾ C canola or vegetable oil
§ 1 ½ tsp vanilla extract
§ 1 tsp salt
§ 1 tsp baking soda
§ 1 ½ tsp cinnamon
§ 2 C all purpose flour
§ Optional: caramel sauce
Directions:
1.
Preheat
oven to 350.
2.
Lightly
beat eggs in large bowl. Add oil, sugars
& vanilla. Whisk together. Stir in
flour, baking soda, salt and cinnamon. Fold in apples.
3.
Spread
mixture into an ungreased 9x13 baking dish.
4.
Bake
40 minutes.
5.
Cut
into squares.
6.
If
desired top with caramel sauce before serving
