Spicy Peanut Noodle (Ramen Remake)

My favorite take out food is thai food.  I love it.  I could eat it every day.  I generally stick with the same types of things but every now and then I'll get something with a peanut sauce and it's just divine.  Alot of times in the middle of the day I feel like I want some thai noodles or something but the thought of lugging all the kids into a restaurant doesn't appeal to me.  So this is perfect.  These are not exactly a thai noodle but it certainly fills my need for something from a thai restaurant in a pinch and really, what  mom doesn't have a package of ramen noodles on hand for emergency lunches.

Ingredients:

1 pkg chicken flavored Ramen noodles
 (including flavor packet)
1 T soy sauce
2 T peanut butter (I prefer chunky but smooth is fine)
2 tsp Sriacha
(optional - vegetables such as peas)


Prepare ramen according to package directions.  Drain alot of the liquid, leaving just enough to create a sauce.  Return pan to low heat and add all other ingredients.  Stirring until just combined.  Remove from heat and enjoy.

This is a great stand alone lunch or it would make a great side dish to some stir fried veggies and or steamed tofu or chicken.
