Cheesesteak Stuffed Peppers


This is another of one of those recipes that has been floating around Pinterest and other blogs for weeks now.  I finally decided to give it a whirl.  I have to say, I was expecting my husband to snub his nose at it and ask what else is for dinner.  But it went over better than I thought.  This is a kid friendly, very quick to throw together, weeknight meal.  All the other sites are just serving it alone as the meal.  That doesn't cut it in my house, so I made some beef flavored rice and served it on top of the rice and it was considered a complete meal over here.  I think you'll be surprised at this one.

I don't have an exact website/blog to credit this to because I saw it so many places, I have no idea where it originated.  I made a few small changes and here is my version.


Ingredients:

12 oz deli roast beef, sliced into strips
12 slices provolone cheese
3 large green bell peppers
1 sweet onion, sliced
8 oz mushrooms, chopped (I used baby bella)
2 T butter
1 garlic clove, minced
1 tsp seasoned salt
black pepper to taste

Directions:

Preheat oven to 400.

Melt butter in sauté pan over medium heat.  Add onion, garlic and mushroom.  Cook over medium heat until softened.  About 10 minutes.  Add roast beef strips into pan with mushroom mix and season with seasoned salt and black pepper.  Cook about 7 minutes.

Meanwhile, slice each pepper in half lengthwise.  Remove ribs and stem and place in baking dish.  Line the inside of each pepper with a slice of cheese.

Top each cheese filled pepper with meat and mushroom mix.  Top with additional slice of cheese.

Bake 20-25 minutes until cheese is bubbly and golden brown.

Serve over rice if desired.
