Buffalo Chicken Casserole


My family LOVES buffalo chicken.  That being said it can get pretty boring the same old way.  I stumbled upon a recipe on a fellow bloggers site and I just knew I had to make it.  This thing has buffalo chicken, ooey gooey cheese, bacon, do I need to go on?  No, I didn't think so.

Ingredients:

2-3 boneless skinless chicken breasts, cubed
4 large russet potatoes, cubed
1/3 Cup olive oil

1.5 teaspoon salt
1 Tablespoon pepper
1 Tablespoon paprika
2 Tablespoons garlic powder
6 Tablespoons hot sauce
*Topping*
2 Cups shredded cheese
1/2 Cup bacon, crumbled
5 green onions, diced
 
Directions:
·         Preheat oven to 500.
·         In a large bowl combine olive oil, hot sauce, salt, pepper, paprika and garlic powder.  Add potatoes and mix well to coat.
·         Pour potatoes in a greased 9x13 dish, reserving any extra sauce that remains in bowl.
·         Bake potatoes 45 minutes, turning every 15 minutes.  Meanwhile place cubed chicken in bowl with leftover sauce and stir around to coat chicken. In a small bowl combine topping ingredients.
·         When potatoes are done, add the chicken and any remaining sauce.  Sprinkle with topping mixture and cook 10-15 minutes or until chicken is cooked through.
