My family LOVES buffalo chicken. That being said it can get pretty boring the same old way. I stumbled upon a recipe on a fellow bloggers site and I just knew I had to make it. This thing has buffalo chicken, ooey gooey cheese, bacon, do I need to go on? No, I didn't think so.

Ingredients:
2-3 boneless skinless chicken breasts, cubed
4 large russet potatoes, cubed
1/3 Cup olive oil
1.5 teaspoon salt
1 Tablespoon pepper
1 Tablespoon paprika
2 Tablespoons garlic powder
6 Tablespoons hot sauce
*Topping*
2 Cups shredded cheese
1/2 Cup bacon, crumbled
5 green onions, diced
Directions:

Preheat
oven to 500.
·
In
a large bowl combine olive oil, hot sauce, salt, pepper, paprika and garlic
powder. Add potatoes and mix well to
coat.

Pour
potatoes in a greased 9x13 dish, reserving any extra sauce that remains in
bowl.

Bake
potatoes 45 minutes, turning every 15 minutes.
Meanwhile place cubed chicken in bowl with leftover sauce and stir
around to coat chicken. In a small bowl combine topping ingredients.

When
potatoes are done, add the chicken and any remaining sauce. Sprinkle with topping mixture and cook 10-15
minutes or until chicken is cooked through.
