One Pot Lemon Herb Chicken

                                                                     

A one pot meal that takes 5 minutes to prep? How you ask? I'll tell you below.  As I was making this meal I said to myself (and to the hubby) "This is too easy to be good, sorry if it's lousy, we can get a pizza if so".  I was not really looking forward to this BUT I was wrong.  Not only did I enjoy it, I got smiles from around the entire table and was asked to mark it as "a keeper".  A keeper indeed, it took just over an hour to cook but the prep was literally 5 minutes.  Yes sir, in the keeper recipe box you go!

Ingredients:

3 large potatoes (cut into large chunks)
3-4 boneless skinless chicken breasts
1 can green beans (or fresh) drained
1 packet dry italian dressing OR 2T homemade dry italian seasoning -recipe here(http://foodyschmoody.blogspot.com/2013/02/dry-italian-dressing-no-more-buying.html)
1 stick of butter
1/2 lemon cut into slices

**Okay before you get your panties in a ruffle about the amount of butter in this, just know you could easily cut the amount in half.  I prefer to use the whole thing though.

Lie the lemon slices down the center of a baking pan and top with chicken breasts.
Add potatoes to one side and green beans to the other
Top everything with pats of butter and dressing mixture. Cover with foil and bake an hour - pulling it out halfway through to baste with butter if desired.
After an hour if your potatoes are not soft enough, remove the chicken and set aside on a covered plate and return the beans and potatoes to oven for another 10 minutes or so.
 


Recipe:
  • Preheat oven to 350
  • Place lemon slices in a line down center of baking pan, top with chicken.
  • place the potatoes on one side of the chicken and your beans on the other.
  • Top everything with pats of butter and sprinkle the italian dressing on everything.
  • Cover with foil and bake for 1 hour.  Pull out halfway through if desired to baste everything with that lovely lemony butter.
  • After one hour remove from oven.  If potatoes are not fork tender, remove chicken and set aside covered on a plate and return the potatoes and beans to oven for another 10 minutes.
  • Enjoy!  A complete meal in one pan!
